Trader Joe’s Ground Turkey Enchiladas
Easy, cheesy and packed with flavor— these crowd-pleasers come together in no time and disappear just as fast!
I can’t remember life before these enchiladas! They’re ridiculously easy, packed with flavor, and a total family favorite. Bonus? The recipe doubles beautifully, so go ahead and make extra—you’ll thank yourself later.
Ingredients:
• 1 lb organic ground turkey
• 2 jars salsa verde (I love Trader Joe’s!)
• 1 block Manchego cheese, shredded
• 12 Siete grain-free almond flour tortillas
Spices: cumin, chili powder, salt, pepper, paprika,
(season to your heart’s content!)
Instructions:
1. Preheat the oven to 350°F.
2. Brown the ground turkey in a skillet over medium heat. Add spices to taste—I like a good sprinkle of each.
3. Shred the Manchego while the meat cooks.
4. Warm tortillas by wrapping them in damp paper towels and microwaving for 35 seconds. This keeps them soft and pliable.
5. Pour half a jar of salsa verde into the bottom of a 9x13 baking dish.
Assemble:
• Lay out the warm tortillas.
• Add a spoonful of salsa, a scoop of seasoned turkey, and a sprinkle of shredded cheese to each.
• Roll them up and place them snugly in the dish.
• Cover with more salsa and a generous layer of cheese.
• If you’re feeling fancy, add sliced black olives to half the dish (I always do!).
Bake:
• Cover with foil and bake for 30 minutes.
• Remove the foil and broil for 5 minutes until the top is crispy and the cheese is golden brown.
Finish:
• Let them rest for 5 minutes.
• Top with avocado slices and fresh cilantro.
Dig in and enjoy! These enchiladas never last long at my house.
